Before I was using the Billy Reece Recipe but I just made some magic of the ingredients to make it soft and fluffy. I used WILTON BUTTERCREAM as my icing.
Ingredients:
1 3/4 cups Cake Flour
1 1/4 cups All Purpose Flour
2 cups White Sugar
1 tablespoon Baking Powder
pinch of salt
1 Cup unsalted butter
4 large whole eggs
1 teaspoon Vanilla
Direction:
- Preheat oven into 180 C
- Cream the butter and the sugar until light and fluffy. Add the eggs one at a time.
- Mix the dry ingredients such as flour, baking powder, salt and sugar in a separate bowl.
- Combine the dry ingredients with the batter mixture. Add the vanilla and mix well.
- Pour the batter into the cupcake liner until 3/4 full.
- Bake for 20 minutes.
The young ones enjoyed it..
